What kind of plants will grow in complete shade under a big oak tree?

Doug says that he's not a Southern gardener and really can't advise you on those. Sorry.

bromeliads

Bromeliads are the easiest plants to grow in the shade, they take little maintenance and do well in humid and dry conditions. Don't bury them in soil, they prefer a well-drained mulch. Some people just leave them in pots surrounded with mulch. They sprout little pups that you can pop off to start a new plant, and they come in a variety of hues.

there is a website called floridata.com that I unsed when I was looking for plants for my new flower bed. It is in full shade and under an oak tree.

Another thing you may want to try is mixing the existing soil with a combination of potting soil and ash (we used straight ash from our fire place and bbq). The ash will neutralize some of the acid from the oak trees.

If you don't want to do that much work and are just looking for just a flowering bush, try azelas. They love and thrive on the acid and the heat as well. Good luck!
